Black-eyed bean salad

A tasty and light dish, perfect to start your week!

Execution Method:

For the dressing:

  • Put the zest and juice of the lemon in a blender.
  • Add the olive oil, tahini, maple syrup, garlic, water, salt and pepper.
  • Beat them for 3-4 minutes until the mixture is homogeneous and set aside.

For the salad:

  • Finely chop the green onions.
  • Cut the peppers and carrot into small cubes and put them in a bowl.
  • Chop the parsley and add it to the bowl.
  • Add the black-eyed peas and mix well with a wooden spoon.
  • Pour the dressing into the bowl.
  • Mix well, check the seasoning and serve.
