"Snowy" cheesecake!

A delicious one recipe which refers to… Christmas!

Materials:

200 gr. cookies

¼ cup grated coconut

¼ cup almond fillet (lightly roasted)

½ cup butter (melted)

1 fl. White chocolate

½ cup whipping cream

2 and 2/3 cups cream cheese

¼ cup almond milk

½ tsp vanilla extract

Juice of ½ lime

 

For the garnish:

1 fl. grated coconut

12 coconut truffles

 

Friday:

Cover the base of the form with non-stick paper.

Put the biscuits, coconut and almonds in the mixing bowl. Beat until they are homogeneous.

Add the butter and beat for another 2 minutes. Transfer to the form. Spread evenly on the base and sides and place in the fridge.

Melt the white chocolate in a bain-marie. Add the cream and mix until combined. Leave aside to cool.

In a large bowl, beat the cream cheese with a mixer until fluffy. Add the melted chocolate, coconut milk and vanilla.

Finally, add the lime juice.

Pour the mixture into the base and refrigerate for at least 2 hours.

Before serving, spread the grated coconut on the surface and garnish with the truffles.
