Healthy French Fries? It does, if you do it the right way

Acrylamide is a neurotoxic and possibly carcinogenic substance for humans.

Produced when some foods are cooked at a high temperature (eg frying).

It is formed when an amino acid, asparagine, reacts with sugars, such as fructose and glucose, at high temperatures.

Both asparagine and specific sugars are natural ingredients found in starchy foods such as potatoes.

Conclusion: Potatoes fried at high temperatures have a chance of developing acrylamide.

The most important factor in oil oxidation is temperature.

But since french fries are one of the tastiest, and therefore most popular foods, here's what you need to do to make frying as healthy as possible.

– Fry only with olive oil.

– Preheat the oil, but do not let it burn.

– Drain the potatoes well before frying them, because that way the oil doesn't spoil quickly and the potatoes don't absorb too much oil.

– Do not let the potatoes burn, the frying time should be short.

– Replace the oil after each frying.
