Vegan Bolognese

Make delicious at home Vegan Bolognese!

Materials:

  • 2 tbsp olive oil
  • 1 onion
  • 1 sc. garlic
  • 1 carrot
  • 250 gr. soy mince
  • 2 tbsp tomato paste
  • 50 gr. Red wine
  • 800 gr. water
  • 1 bay leaf
  • 1 tbsp fresh thyme, leaves only
  • 1 tbsp smoked paprika
  • 2 grains of spice
  • salt
  • pepper
  • 10 gr. fresh ginger, grated
  • ¼ bunch of parsley

For serving:

  • 250 gr. red lentil pasta or other pasta of our choice.

    Execution Method:

    • Heat the olive oil in a pan Mrarole on medium heat.
    • We chop onion, garlic and carrot.
    • Put them in the pot and saute for 2-3 minutes until they are slightly golden.
    • Add the soy mince and saute for 1 more minute.
    • Add the paste and mix well with the help of a wooden spoon.
    • Deglaze with the wine, mix well and add the water, bay leaf, thyme, paprika, allspice, salt, pepper and fresh ginger.
    • Stir, reduce heat to low to medium and simmer for 25-30 minutes.
    • Chop the parsley, add it to the pot, and mix with the spoon.
    • Remove the pot from the heat and serve with the pasta.
